Its Wednesdayyyy!!!!
We all know what that means: Classes have started again…boo.
But on the bright side, it also is 1) Halfway to the weekend and 2) Jenn’s WIAW party!
If you haven’t heard about What I Ate Wednesday, you probably live under a rock. But, since I’m nice and like to enlighten people to the wonderful things in the world, I included a link to her page where you can learn more about this awesome weekly blog party.

For the past few weeks, I’ve been showing you some highlights of meals I’ve eaten throughout the week (mostly because I’ve been having some daily eating struggles, and didn’t want to post a full days eats)
But, this week I’ve gotten back on track, upped my intake to an acceptable level, AND had some delicious things to share, so I’m going back to the original “daily recap” method.
Breakfast:
Berry smoothie (Vanilla Chobani, 1/2 banana, 1/4 c frozen berries) topped with some Kashi GoLean, chia, blueberries, and melted almond butter. Side of egg whites with LOTS of Tony’s Cachere’s seasoning, and obviously a huge cup of coffee.
Side note: My mom got me some Community Coffee for the new apt…I’ve never ever had better home-brewed coffee in all my life. People I am HOOKED. Seriously. Its dark and rich, but not too bitter or acidic. Earthy but not “dirty” and all I need is one cup to jolt me awake. Such a perfect way to start off my morning.
And in the spirit of summer staples: this smoothie was a perfect summer breakfast. Cold, creamy, fruity, delicious. And egg whites are, well, egg whites. Nothing special there.
Snack was an unpictured 1/2 apple consumed on the way to a nutritionist appointment (more on this later–it went really well!)
Lunch was actually not what I’m about to show you. What I actually had was a wrap with spinach, hummus, and a Morningstar Blackbean Burger.
But, I had these pictures from last week of a wrap that was maybe the best one I’ve ever made, so that’s the one I’m going to share. #sorrynotsorry
This beauty included spinach, hummus, sliced zucchini, home-grown tomatoes, and…GRILLED TOFU.
So I’ve only cooked tofu at home twice, and I’ve made it the same both times because ITS DELICIOUS.
I press some extra-firm tofu under some heavy-ass books, marinate it with a little EVOO, balsamic vinegar, ground pepper, lime juice, and Dale’s steak marinade. Then grill it up 5 min. on each side. (okay my Dad grills it. Thanks Dad!). And its perfect. I’m definitely a tofu convert. Next up–baking it? Tofu Scramble? We’ll see!
Oh and today I had a side of Chobani Apple Cinnamon with the other half of my morning banana and some trail mix.
Are you counting my Chobanis? This is 2 by 12:30. Awww yeahhhh.
Snack later was picked up from Starbucks between a long day of organizing and distributing this year’s team gear, and a team meeting. Ladies and Gentlemen swim team is back in action full swing!
I had a Kind Bar (surprisingly good) and my new obsession: Iced Grande Non-fat Green Tea Latte. What was the best part? I have a guy at Starbucks who always gives me my drinks for free, and he happened to be working when I stopped in today!
Dinner was thrown together pretty quickly because I was really hungry.
I chopped up some squash, vidalia onion, and orange bell pepper, and roasted it all with some S/P, Tony’s and balsamic. I chopped some chicken breasts and sauteed them with Pam spray, S/P, and heated up some black beans. Then I mixed it all together and topped with some sprinkle cheese. Filling and delicious!
Side note: Bell Peppers are another summer staple for me, but I only like the orange. I can tolerate yellow, but HATE red and green. Weird? Maybe.
Or maybe I just like the orange because its the color my blood bleeds. Right Cait?!
Okay sorry I just had to throw that last really cheesy comment in because I’m getting PUMPED for football season. Just a few more days left to kickoff!
Night snack:
Mess of a warmed chocolate Vita Top, Strawberry Cho, Bettern Peanut Butter (still can’t stand to smell or taste regular PB) and topped with some uber nutritious Double Chocolate Krave cereal. This looks nasty, but lord it was good.
Oh and thats 3 Chobanis for the day. #sorrynotsorry
And of course, I finished the day off with some Tazo Chai

On a final note:
I can’t put into words how grateful I am for all the support I received about by post yesterday. So many people were supportive and encouraging, and still others shared similar experiences and words of wisdom. It was really cool to hear from people who never had any experience with and ED or athletics who have felt almost the exact same things I am currently feeling. The power of human connection never ceases to amaze. I am so so blessed to be surrounded with such strong, smart, loving, and genuinely beautiful souls. Thank you all so much for your words, thoughts, and prayers. I love you all more than I could ever express. I feel so much more confident in my decision now that I know how much support I have, and how many people I can turn to for help.

What was the best thing you ate this week?
Do you have something that you eat multiples of every day? Clearly for me, its Chobani.












I’m a tofu addict! Lots of recipes up if you fancy something different!
I’ve only tried Chobani a handful of times, but if I had it at my disposal I could eat it multiple times a day too!
And your post reminded me that I have a few boxes of vitatops stashed in the freezer…those may have to resurface. Like now.

I’m loving the Chobani love in this post! I’ve had days where I’ve consumed the equivalent of three containers as well. I find the more I eat, the more I crave! Thank goodness it’s a healthy addiction, right? Have you tried the new chocolate chunk flavor? Amazing.
It’s been ages since I’ve had grilled tofu! That needs to change this week. Not only does it taste amazing, but it’s cheap! Thanks for the inspiration, girl! <3
I haven’t tried the chocolate chunk but am DYING to! And let me know how the grilled tofu is this week! I’m sure I’ll be making some more too!
